When I finally tried their signature “Classic Carol” chicken salad, I understood the hype immediately. That perfect balance of tender chicken, creamy dressing, and subtle seasoning had me plotting how to recreate it at home before I finished my meal!

Why This Recipe Works
What makes this copycat version so spot-on? Several key elements:
- Using only chicken tenderloins creates the perfect texture
- Poaching the chicken in stock adds depth of flavor
- The secret ingredient (dry Ranch mix) provides that distinctive Chicken Salad Chick flavor profile
- Finely dicing the celery ensures the perfect balance in each bite
- Chilling time allows all the flavors to meld together beautifully
Ingredients
For the Chicken:
- Chicken tenderloins – Creates the perfect shredded texture that’s distinct from breast meat; the shorter fibers give the salad its signature texture
- Low-sodium chicken stock – Infuses the chicken with flavor while poaching, adding depth to the final salad
For the Dressing:
- Mayonnaise – Provides the creamy base that binds everything together while adding richness, Chicken Salad Chick uses Duke’s mayonnaise
- Celery – Adds a fresh crunch and subtle flavor that complements the chicken without overpowering it
- Dry Ranch salad dressing mix – The secret ingredient that gives this salad its distinctive flavor profile
- Salt – Enhances all the other flavors and balances the creaminess
- Ground black pepper – Adds a subtle spice that rounds out the flavor profile

- Place the chicken tenders and chicken stock in a large pot.
- Heat the pot over medium heat, letting the chicken poach for approximately 15 to 20 minutes. Ensure the chicken is fully cooked before proceeding.
- Once the chicken is cooked, shred it. You can use a stand mixer fitted with a paddle attachment or manually shred the chicken tenders using two forks.
- Mix celery, mayonnaise, dry Ranch dressing, salt, and black pepper in a large bowl. Stir the chicken mixture until it is well blended.
- Add the shredded chicken into the bowl and stir until it’s fully incorporated with the other ingredients.

Expert Tips for Perfect Chicken Salad
- Don’t skip the chilling time – This allows the flavors to meld and the dressing to infuse the chicken fully.
- Dice the celery extra fine – The texture should be noticeable but not chunky, just like at the restaurant.
- Use room temperature mayonnaise – It blends more efficiently and creates a smoother dressing.
- Don’t substitute chicken breasts – The tenderloins are key to achieving the right texture.
- Pat the chicken dry after shredding – This prevents the salad from becoming watery.
- Too dry? Add a tablespoon of mayonnaise at a time until you reach your desired consistency.
- Too wet? Add a bit more shredded chicken, or let it sit in the refrigerator uncovered for 30 minutes.
- Flavor not quite right? A pinch more Ranch mix or a dash of garlic powder can help enhance the flavor.
- Texture too chunky? Next time, chop your celery more finely or try grating it for a more subtle texture.

Conclusion: Why This Classic Carol Chicken Salad Will Become Your Go-To Recipe
There’s something truly special about a perfectly executed chicken salad – it’s comfort food that feels both indulgent and light at the same time. This Chicken Salad Chick copycat recipe captures everything that makes the original Classic Carol so craveable: the ideal texture from using chicken tenderloins, the subtle crunch of celery, and that distinctive flavor profile that keeps fans coming back.
My first experience for there chicken salad was delighted however I recently purchased premade to go containers, I was looking forward to another Fancy Nancy sandwich but on the second bite there was a texture that didn’t belong in the salad, it looked to be either chicken skin or something but was about the length of a dill pickle but thinner and not as wide, needless to say it ruined my taste for chicken salad chic in the future and that’s disappointing to be a restaurant thats healthier than fast food.
I am sorry you had a bad experience at the restaurant. My website isn’t associated with the restaurant.
Perfectly delicious! I will omit the 1/2 teaspoon of salt next time or add it after tasting if needed. The dry ranch dressing provides enough saltiness for my taste. Glad to find this recipe!
My husband LOVES their Kickin Kay Lynne. Any idea what to add to make that?
I don’t know how to make this one, I think it is pretty good too!
They dont use an exact ranch seasoning. It may be similar, but its not ranch. Im sure ranch seasoning may add good flavor though. They steam chicken tenders, mix it with the dukes, secret seasoning, and the minced celery. It sits overnight before being mixed into flavors. Kickin kaylynne would have buffalo sauce, ranch, bacon, cheddar, and A touch of Sriracha. 😁
Thanks for the heads up. I didn’t think they used Ranch, as I do, but it’s hard to approximate proprietary seasoning blends. I think it is close in flavor.
Spot on
Does anyone know the brand of pickle spears they use?
I don’t know.
Schwartz pickles
Can you freeze your chicken salad?
I think you could freeze this for up to 3 months.
I would like to also suggest Rockin’ Rita because it’s so limited in when you can get it!
Thank you!
Hi Erica! I have asked at CSC before, and Rockin’ Rita is just Classic Carol with Wickles Pickles spicy red sandwich spread mixed in! I use this copyKat recipe and just add the wickles! It is my FAVORITE And hate you can only get it certain times of the year!
I just made this recipe. My husband and I were surprised how much it tastes like the original. It is going into the food rotation!!! Thank you!!

I’m excited to try this! I LOVE chicken salad chick (but now moved away where there are none local – within a couple hours!). I think I saw you’re working on a copycat recipe for the fancy nancy, is that right? Would love that and the sassy scotty!! 🙂
THANK YOU! We don’t have a Chicken Salad Chick where I live. I go everytime I visit my sister! My favorite is Fruity Fran. I never expected to like pineapple in my chicken salad and it is now my FAVORITE! Please work on a copykat for that one too.
I’d love the recipe for Fancy Nancy and for Ceranberry Kelly, please. Thanks a bunch! Happy eating!
Working on the Fancy Nancy right now 😉
just add grapes, apples and chopped pecans. They start with their base chicken salad and add the simple ingredients for each flavor.
Delicious! Please post a recipe for Jalapeño Holly! I can’t find it anywhere 🙁
Yes, I want a recipe for Jalapeño Holly! It is my all time favorite.
I already have some shredded chicken left over from another recipe I made. How much chicken is 1 1/2 pounds once it’s cooked and shredded?
This is delicious. I was dubious before hand, but will make it again and again. Thank you!!
I see 2 responses to the type of mayo that is used, which one is correct.
They use Dukes.https://www.chickensaladchick.com/documents/nutrition-menu/Website_Nutritional-AllergyInformation_06.10.19.pdf
Is there any way to lower the sodium and potassium?
Start with a homemade mayonnaise would help.
PLEASE PLEASE PLEASE GIVE ME THE RECIPE TO SASSY SCOTT !!!!!!!
I will keep your suggestion in mind!
Just add kens ranch dressing crumbled bacon and cheddar cheese to this
Hellman’s, Duke’s, or Kraft? They all taste so different. Which do you use for this recipe?
Linda
They use Duke’s Mayonnaise.
They use Duke’s, not Hellmann’s
Dukes mayo
Do you shred the chicken in the broth or remove from broth. I removed mine but it isn’t creamy. Should I add more mayonnaise.
Yes, you should add more mayonnaise if it isn’t creamy.

You can, but it may not taste the same depending on how the chicken was seasoned.
