Why This Recipe Works
The genius of Palm’s Steak a la Stone lies in the harmonious marriage of perfectly cooked sirloin with the rich, savory pimento butter sauce. The combination of sweet onions and tangy pimentos creates a complex flavor profile that enhances rather than masks the beef’s natural taste. This hot stone cooking is unique. Serving over toast adds textural contrast while soaking up the flavorful butter sauce, creating a complete dining experience in every bite.
Ingredients
Here’s a list of what you need:
- Yellow onion – Provides a sweet, caramelized flavor foundation that balances the tangy pimentos and rich butter
- Whole pimento peppers – Contribute bright acidity and subtle heat that cuts through the richness of butter and beef
- Unsalted butter – Creates the luxurious sauce base and adds essential richness that coats the steak beautifully
- Olive oil – Prevents butter from burning during sautéing while adding fruity depth to the sauce
- Sirloin steaks – Deliver the meaty centerpiece with excellent flavor and tenderness when properly cooked
- Thick-cut bread slices for toast – Provide a sturdy foundation that absorbs sauce while adding textural contrast
- Fresh parsley – Adds bright color and fresh herb flavor that lightens the rich butter sauce

Did the Palm just recently close some or all of their places? I may just be thinking of the NY location.
They may have closed some of them, I know the one in Houston is still open.
Thanks, Only had a chance to go one time to the NYC location. It was good and it was pricey. But it was cheaper than FAO Swartz. Tried to buy my daughter a toy there and the cheapest item was $60.00. I will never forget that shopping trip. Plus parking was $28.00 for the first hour. Some things you just never forget!! haha
That’s a pretty pricey trip!
This was good I would not have thought of putting pimientos on steak. It turned out really good! I will be making this again!
