1canchopped artichoke hearts (not the pickled kind)(~14 ounces)
1cupsliced green onions
1/2chopped green bell pepper
20 to 30olivesthinly sliced
1/3cupmayonnaise
3/4teaspooncurry powder
Instructions
Prepare the Rice-A-Roni according to the package directions.
Drain the artichoke hearts and SAVE the juice.
Place the cooked rice in a large bowl with the drained artichokes, green onions, bell peppers, and olives.
In a small bowl, combine the reserved artichoke juice with the mayonnaise and curry powder. Mix well. Pour the mixture over the Rice-A-Roni and stir to combine.
Serve hot, at room temperature, or cold.
